The Process
1. Harvest & Sort
Ripe pink cherries are hand-picked and carefully sorted to remove any defects
2. Pulping
The outer fruit layer is removed, separating the beans from the cherry skin
3. Fermentation
Beans ferment in water for 12-48 hours, breaking down the mucilage layer
4. Washing & Drying
Beans are thoroughly washed and dried to preserve their clean, bright character
