On his family farm, Javier discovered the rare Bourbon Aruzi varietal—recognizable by its distinct appearance, high yield, and natural disease resistance. After confirming the genetics through lab analysis, he began cultivating it with exceptional care, helping reintroduce this special varietal to the region.
Grown at 1700 meters in rich volcanic-ash soils, the cherries benefit from cool mornings, steady humidity, and strong midday sun. This microclimate supports slow, balanced maturation, resulting in remarkable sweetness and complexity.
Javier meticulously sorts each harvest before a 30-hour submerged fermentation, followed by careful depulping, washing, and slow drying under controlled conditions. The result is a clean, radiant cup that showcases the full potential of this rare varietal.
