Step-By-Step Guide to Making a Great Cup Of Coffee With The Kono Dripper

Recipe: How to Make Pour Over with the Kono Dripper

For those who love coffee, understanding the basics of brewing is essential. There are many different methods for making an exceptional cup of coffee and we are now here to introduce you to one of our favorite ones using the Kono Dripper. This method combines simple steps with careful attention to detail to ensure a sweet, low-acidity cup every time. Let's break down how to make a great cup of coffee using this method.

The first step in making a great cup of coffee using this method is wetting the filter. This removes any papery taste from your cup and also preheats it for better extraction. We suggest doing this by the sink, so that pressure from the water hits quickly and builds up before it's draining through so that the weight of the water sucks that filter down. After wetting the filter, you may find some areas where it doesn't suction super well - those you can just smooth it with a finger.  This should result in a fully suctioned filter except at the bottom where you see the air pockets. That is where the partial bypass is going to occur.

Then, measure and add 12 grams of your favorite Bean Bros grounds into the filter and give it a few gentle shakes to level out the grounds. Take a chopstick or pencil, or whatever is at hand, and gently make a little divot in the middle. Next, take steaming water at 99 degrees right off of boil, and start a 30 gram bloom from high up to get some turbulence into the bed. At 30 grams do a little swirl. You will see how sludgy your grounds will become because there's a lot of carbon dioxide releasing. Let it sit for one minute. This allows carbon dioxide gas trapped inside the grounds to escape which helps release more flavor into your final brew.

After allowing your grounds to sit for a minute, swirl them gently around once or twice and then begin your turbulent flow at 130 grams of water with the temperature down to 97 degrees. With this lower temperature we’re making sure that you don’t exasperate the coffee, and pull out too much bitterness. Let it sit for two minutes.Finally, finish off with a final pour at 200 grams and some gentle swirls; allow five to five and a half minutes for it all to drain through before pouring yourself a fresh cup!The result? A tasty cup with high sweetness and low-acidity that is sure to please every time. Enjoy!
