Competition Coffee - VILLA ROSITA – RED PLUM - Colombia
We're introducing our next special release featuring Nomad coffee. This time we are excited to be offering a Colombian competition series coffee from the Villa Rosita farm. From this special processing coffee, you can expect taste notes of strawberry lollipop, raspberry jam, blackberry liqueur
Villa Rosita farm is located in the municipality of Piendamó in the village of Tunía, All the coffee from this farm is processed in the Cauca, Finca El Paraiso, at a height of 1930 meters, where they have the latest technology for the processing of coffee beans.
This lot has a process that they call “Red Plum” which makes a variety of high production but aromatically weak as the castillo variety stands out absolutely in the cup with some clear notes of raspberry jam, strawberry lollipop and blackberry liqueur.

How does the Red Plum processing work?
1. Anaerobic fermentation in cherry for 48 hours in tanks with a valve at a temperature of 18ºC.
3. Anaerobic Fermentation in mucilage for 48 hours at 20ºC.
4. Washing with thermal shock. First, washed with water at a temperature of 40ºC and then with water at 12ºC.
5. Controlled drying for 34 hours at a temperature of 35ºC and a relative humidity of 25%, until reaching a humidity of the grain between 10% and 11%.
