We are thrilled to introduce a unique tasting experience crafted in collaboration with POMA. This curated selection features five distinct coffee varieties from the Variety Garden at Volcán Azul in Costa Rica, offering a deep dive into the fascinating influence of coffee genetics on quality.

Genetics are a key factor in shaping coffee's sensory profile. Each coffee variety carries a unique genetic makeup that impacts the formation of volatile organic compounds, as well as the levels and composition of sugars, acids, oils, and nutrients in the seeds, all of which contribute to aroma and flavor development. To showcase these genetic differences, all coffees in this box have been grown on the same plantation and processed in the same way, letting their intrinsic genetic qualities take center stage.

POMA has teamed up with Apax Lab to develop a specific water profile that enhances the flavor of our coffees to their fullest potential. This water blend is carefully crafted to balance and elevate all the unique qualities of the coffee beans. 

Volcan Azul Farm - Costa Rica

Volcán Azul, managed by Alejo Castro Kahle, is situated on the fertile volcanic slopes of the Poás Volcano in Central Valley at altitudes ranging from 1400-1900 masl., complemented by a state-of-the-art mill.

Alejo and his team are dedicated to maintaining and improving coffee quality, honouring their family’s long legacy of outstanding coffee for several generations.

Their willingness to innovate and develop has been essential to POMA's collaborative efforts, which has seen them initiate a lot of experimentation on their farm for the coming years.

The Poma signature processing method

‘The Cold Washed Process’ - is an innovative processing method designed to preserve and intensify variety unique aromas.

First, the coffee cherries are subjected to an initial cold storage period of 48 hours at 8°C. Subsequently, the cherries undergo thorough depulping and washing of the mucilage, followed by a drying at low temperatures (below 10℃) in a pressurized, rotating tumble dryer.

This gentle and meticulous drying procedure forces the yeast and seed into dormancy, thereby prohibiting both fermentation and germination, ultimately preserving and intensifying the coffee’s inherent aromas and safeguarding its natural profile.
